Prvi je škrobno brano, jer znatno poboljšava teksturu tijesta, čineći ga mekšim i prozračnijim. Ne morate ga staviti puno, samo oduzmite do 1/5 brašna i zamijenite ga škrobnim.

Drugi sastojak je griz,zato što popravlja strukturu tijesta i omogućuje mu da se riješi suvišne vlage.
Možete birati na koji ćete ga način koristiti: tako da tijestu dodate jednu žlicu ovog sastojka ili tako da dio brašna (do jedne četvrtine ukupne količine) zamijenite sitno mljevenim grizom. Možda niste znali, ali baš je takvo brašno, koje se radi od fino mljevene durum pšenice od koje se inače radi griz, tajna najboljih pizza i u tu se svrhu koristi u Italiji.

Takvo se brašno još naziva griznim brašnom, a picajoli ga obožavaju zato što tijestu daje visok postotak proteina čineći ga elastičnijim pa se zbog tpoga diže puno bolje nego kad je načinjeno od običnog brašna.
Ovakvo e brašno također koristi za posipanje površine za rastezanje tijesta za pizzu, ali i posude za pečenje jer ne samo da joj pomaže da se ne zalijepi nego joj daje daje lijepu hrskavost s donje strane.

Neiskusnima se možda čini da je zamijesiti dobro tijesto tek tako. Ali nije. Treba poznavati određene male tajne ili se pomiriti s tim da ćete uza sav trud dobiti tek prosječan rezultat. Prvi je škrobno brano, jer znatno poboljšava teksturu tijesta, čineći ga mekšim i prozračnijim. Ne morate ga staviti puno, samo oduzmite do 1/5 brašna i zamijenite ga škrobnim.

Drugi sastojak je griz,zato što popravlja strukturu tijesta i omogućuje mu da se riješi suvišne vlage.
Možete birati na koji ćete ga način koristiti: tako da tijestu dodate jednu žlicu ovog sastojka ili tako da dio brašna (do jedne četvrtine ukupne količine) zamijenite sitno mljevenim grizom. Možda niste znali, ali baš je takvo brašno, koje se radi od fino mljevene durum pšenice od koje se inače radi griz, tajna najboljih pizza i u tu se svrhu koristi u Italiji.

Takvo se brašno još naziva griznim brašnom, a picajoli ga obožavaju zato što tijestu daje visok postotak proteina čineći ga elastičnijim pa se zbog tpoga diže puno bolje nego kad je načinjeno od običnog brašna.
Ovakvo e brašno također koristi za posipanje površine za rastezanje tijesta za pizzu, ali i posude za pečenje jer ne samo da joj pomaže da se ne zalijepi nego joj daje daje lijepu hrskavost s donje strane.
