Neki dan su nas zbunile sporadične najave poskupljenja kruha i pekarskih proizvoda, na što su reagirali i ministar gospodarstva i direktorica "Žitozajednice" Nada Barišić kazavši kako za sada nema skupne najave viših cijena ovih važnih prehrambenih proizvoda. Barem ne do kraja godine, prema procjeni direktorice Barišić.
Poskupljenje bi mogli uzrokovati povećani ulazni troškovi kod proizvodnje pekarskih proizvoda, dakle, ne zbog pšenice nego ostalih troškova. Razlozi ne leže ni u uvozu smrznutih proizvoda, koji, doduše, neprestano rastu.

Nada Barišić navodi podatak da je 2012. u Hrvatsku uvezeno 40.000 tona, a 2022. čak 93.440 tona smrznutih pekarskih proizvoda. Taj je uvoz, navodi Barišić, smanjio hrvatske potrebe za proizvodnjom pšenica za 100.000 tona. Nekad su domaće potrebe bile pola milijuna tona pšenice, a sada se to svelo na 400.000 tona godišnje. Odnosno, dvije trećine hrvatske potrebe za pekarskim proizvodima zadovoljavaju se iz domaće proizvodnje, a jedna trećina iz uvoza.
Neupućene ove riječi "uvoz smrznutog kruha" dovozi u zabunu, pa misle kako je tko zna odakle stigao smrznuti kruh koji se u prodavaonicama peče na licu mjesta, ali stvari ne stoje tako.

- Brzo smrzavanje je revolucija u pekarskoj proizvodnji, objašnjava Barišić - Potrošači tako tijekom cijelog dana imaju svježe pečeni kruh. Vlada fama da su ti proizvodi lošije kvalitete, što nije istina, jer oni zadrže sva svoja svojstva i nije potrebno dodavati aditive kako bi duže trajali. Naši pekari su se morali prikloniti takvoj proizvodnji, jer je do toga doveo današnji način života. Svježi kruh želimo kupiti cijeli dan.
Razdoblje u kojem su pekari noću pekli kruh je iza nas i to bi bilo pogubnije za našu pekarsku industriju, objašnjava Nada Barišić. To znači da i veliki proizvođači kruha i ostalih pekarskih proizvoda u svojim pogonima pripremaju kruh za brzo smrzavanje, isporučuju ga u prodavaonice i tamo se kruh peče na licu mjesta.

Prednosti smrznutog "sirovog" kruha su višestruke. Jednostavnija je proizvodnja, ne mora biti noćna kao nekada, proizvodnja je fleksibilnija, a smrznuti kruh, kako kaže Barišić, zadržava svu svoju kvalitetu. I dalje omogućava ponudu toplog, svježeg pečenog kruha tijekom cijelog dana. Na licu mjesta i zadovoljava potrebe potrošača koje se često mijenjaju kako dan odmiče.
Smrznuti kruh može se prikladno pohraniti u zamrzivaču i spreman je za upotrebu u točnim količinama koje su potrebne u bilo kojem trenutku tijekom dana.

Ima i prednosti budući da se kruh zamrzava kako bi mu produžili rok trajanja, a i ne moraju se dodavati konzervansi kako bi ih održali svježima, jer bi to negativno utjecalo i na okus.
Ima i još jedna važna prednost, smrznuti kruh se stavlja u pećnicu prema potrebama, pa se manje toga baca.

Neki dan su nas zbunile sporadične najave poskupljenja kruha i pekarskih proizvoda, na što su reagirali i ministar gospodarstva i direktorica "Žitozajednice" Nada Barišić kazavši kako za sada nema skupne najave viših cijena ovih važnih prehrambenih proizvoda. Barem ne do kraja godine, prema procjeni direktorice Barišić.
Poskupljenje bi mogli uzrokovati povećani ulazni troškovi kod proizvodnje pekarskih proizvoda, dakle, ne zbog pšenice nego ostalih troškova. Razlozi ne leže ni u uvozu smrznutih proizvoda, koji, doduše, neprestano rastu.

Nada Barišić navodi podatak da je 2012. u Hrvatsku uvezeno 40.000 tona, a 2022. čak 93.440 tona smrznutih pekarskih proizvoda. Taj je uvoz, navodi Barišić, smanjio hrvatske potrebe za proizvodnjom pšenica za 100.000 tona. Nekad su domaće potrebe bile pola milijuna tona pšenice, a sada se to svelo na 400.000 tona godišnje. Odnosno, dvije trećine hrvatske potrebe za pekarskim proizvodima zadovoljavaju se iz domaće proizvodnje, a jedna trećina iz uvoza.
Neupućene ove riječi "uvoz smrznutog kruha" dovozi u zabunu, pa misle kako je tko zna odakle stigao smrznuti kruh koji se u prodavaonicama peče na licu mjesta, ali stvari ne stoje tako.

- Brzo smrzavanje je revolucija u pekarskoj proizvodnji, objašnjava Barišić - Potrošači tako tijekom cijelog dana imaju svježe pečeni kruh. Vlada fama da su ti proizvodi lošije kvalitete, što nije istina, jer oni zadrže sva svoja svojstva i nije potrebno dodavati aditive kako bi duže trajali. Naši pekari su se morali prikloniti takvoj proizvodnji, jer je do toga doveo današnji način života. Svježi kruh želimo kupiti cijeli dan.
Razdoblje u kojem su pekari noću pekli kruh je iza nas i to bi bilo pogubnije za našu pekarsku industriju, objašnjava Nada Barišić. To znači da i veliki proizvođači kruha i ostalih pekarskih proizvoda u svojim pogonima pripremaju kruh za brzo smrzavanje, isporučuju ga u prodavaonice i tamo se kruh peče na licu mjesta.

Prednosti smrznutog "sirovog" kruha su višestruke. Jednostavnija je proizvodnja, ne mora biti noćna kao nekada, proizvodnja je fleksibilnija, a smrznuti kruh, kako kaže Barišić, zadržava svu svoju kvalitetu. I dalje omogućava ponudu toplog, svježeg pečenog kruha tijekom cijelog dana. Na licu mjesta i zadovoljava potrebe potrošača koje se često mijenjaju kako dan odmiče.
Smrznuti kruh može se prikladno pohraniti u zamrzivaču i spreman je za upotrebu u točnim količinama koje su potrebne u bilo kojem trenutku tijekom dana.

Ima i prednosti budući da se kruh zamrzava kako bi mu produžili rok trajanja, a i ne moraju se dodavati konzervansi kako bi ih održali svježima, jer bi to negativno utjecalo i na okus.
Ima i još jedna važna prednost, smrznuti kruh se stavlja u pećnicu prema potrebama, pa se manje toga baca.
