No pizza, no pasta - natpis je na jednome od kaštelanskih restorana kojim vlasnik jasno daje do znanja kako s nekim gostima ne želi imati posla. Vjerovali ili ne, unatoč takvom stavu bio je pun, kao i pet lokala koje smo obišli toga petka navečer.

Jedan od onih bez slobodnog stola te večeri bila je i konoba Intrada, tipičan dalmatinski lokal na rivi u Kaštel Novom, gdje su već 16 godina dobrodošli svi profili gostiju, i domaći na toploj marendi, mladi na pizzi, autobusi s ekskurzijama iz Azije, kao i bonkulovići željni svježe ribe.

Od njihove kuharice Katarine Franičević zatražili smo normativ za dva riblja recepta, a ona je rekla da količine stavlja po iskustvu i iz glave nam dala recepte za svoja slasna jela.

Ražnjići od grdobine u umaku od škampa

Na dva ražnjića se rasporedi 35 dekagrama kockica od grdobine, prethodno začinjenih solju i paprom. Peku se na roštilju ili u tavi s maslinovim uljem oko pet minuta da se ne prepeku. Umak se radi tako da se na maslinovu ulju kratko isprže sitno isjeckani repovi škampa.

Na to se doda malo ribljeg temeljca i pasirane rajčice da se dobije ružičasta boja. Za gustoću se dodaje malo Veloute umaka, a može se u istu svrhu iskoristiti i vrhnje za kuhanje.

Drugih začina ne treba dodavati jer su već u ribljem temeljcu. Ražnjići se poslužuju uz kuhanu blitvu s krumpirom.

Zapečene Jakobove kapice

Na maslinovu ulju lagano zapržiti bijeli luk, staviti meso Jakobove kapice i podliti bilo kojim bijelim vinom. Kad se tekućina reducira, dodaje se riblji temeljac, i kad se sve spoji doda se malo parmezana i mali konjak za kraj.

Kapesante s umakom se vraćaju natrag u svoju očišćenu ljušturu i stave na pola minute ispod grijača salamander da površina porumeni. Jedna školjka po osobi se služi kao predjelo, ali ako netko želi može naručiti i više komada.

No pizza, no pasta - natpis je na jednome od kaštelanskih restorana kojim vlasnik jasno daje do znanja kako s nekim gostima ne želi imati posla. Vjerovali ili ne, unatoč takvom stavu bio je pun, kao i pet lokala koje smo obišli toga petka navečer.

Jedan od onih bez slobodnog stola te večeri bila je i konoba Intrada, tipičan dalmatinski lokal na rivi u Kaštel Novom, gdje su već 16 godina dobrodošli svi profili gostiju, i domaći na toploj marendi, mladi na pizzi, autobusi s ekskurzijama iz Azije, kao i bonkulovići željni svježe ribe.

Od njihove kuharice Katarine Franičević zatražili smo normativ za dva riblja recepta, a ona je rekla da količine stavlja po iskustvu i iz glave nam dala recepte za svoja slasna jela.

Ražnjići od grdobine u umaku od škampa

Na dva ražnjića se rasporedi 35 dekagrama kockica od grdobine, prethodno začinjenih solju i paprom. Peku se na roštilju ili u tavi s maslinovim uljem oko pet minuta da se ne prepeku. Umak se radi tako da se na maslinovu ulju kratko isprže sitno isjeckani repovi škampa.

Na to se doda malo ribljeg temeljca i pasirane rajčice da se dobije ružičasta boja. Za gustoću se dodaje malo Veloute umaka, a može se u istu svrhu iskoristiti i vrhnje za kuhanje.

Drugih začina ne treba dodavati jer su već u ribljem temeljcu. Ražnjići se poslužuju uz kuhanu blitvu s krumpirom.

Na maslinovu ulju lagano zapržiti bijeli luk, staviti meso Jakobove kapice i podliti bilo kojim bijelim vinom. Kad se tekućina reducira, dodaje se riblji temeljac, i kad se sve spoji doda se malo parmezana i mali konjak za kraj.

Kapesante s umakom se vraćaju natrag u svoju očišćenu ljušturu i stave na pola minute ispod grijača salamander da površina porumeni. Jedna školjka po osobi se služi kao predjelo, ali ako netko želi može naručiti i više komada.

No pizza, no pasta - natpis je na jednome od kaštelanskih restorana kojim vlasnik jasno daje do znanja kako s nekim gostima ne želi imati posla. Vjerovali ili ne, unatoč takvom stavu bio je pun, kao i pet lokala koje smo obišli toga petka navečer.

Jedan od onih bez slobodnog stola te večeri bila je i konoba Intrada, tipičan dalmatinski lokal na rivi u Kaštel Novom, gdje su već 16 godina dobrodošli svi profili gostiju, i domaći na toploj marendi, mladi na pizzi, autobusi s ekskurzijama iz Azije, kao i bonkulovići željni svježe ribe.
