Ulovio sam meni nepoznatu ribu koju ste mi na kraju identificirali kao kostoroga. Budući da ne znam dovoljno o toj ribi, poslije sam gledao po internetu i našao da je neki smatraju otrovnom, pa me zanima je li to istina. Također, ovaj je put nisam konzumirao, ali pitam za sljedeći put ako je ulovim – može li se jesti?

Kostorog sam po sebi nije otrovan, tj. niti ima otrov u svojim bodljama, kao škarpina, niti ga ima u svojim unutarnjim organima, kao neki tropski došljaci u Jadran na koje u posljednje vrijeme upozoravamo, primjerice napuhače. Ipak, neki kostorozi u pojedinim dijelovima godine mogu postati otrovni jer se hrane morskim životinjama koje u sebi sadrže neke toksine.

Naime, u moru postoji velika grupa fitoplanktonskih organizama koji se nazivaju dinoflagelatima, za koje neki pretpostavljaju da objašnjavaju evoluciju razvoja biljnih u životinjske organizme. Neki dinoflagelati u određenom razdoblju svoga života proizvode toksin. Kako dinoflagelati žive na koraljima, algama, morskoj travi i drugim morskim organizmima, ribe koje se hrane tim morskim organizmima uz osnovnu hranu jedu i njih, te se proizvedeni toksin akumulira u njihovim tijelima, a kasnije se hranidbenim lancem akumulira i u većim karnivornim ribama koje se hrane prethodnima.

Akumulirani toksin

U slučaju da ljudi jedu ribe u kojima je bio akumuliran toksin, može doći do bolesti trovanja koja se zove ciguatera. Toksini koji uzrokuju ciguateru su ciguatoksin, maitotoksin, skaritoksin i palitoksin. Problem ciguatoksina je u tome što je nema mirisa ni okusa, tako da je ribu u kojoj je akumuliran teško prepoznati, a dodatni je problem u tome što je otporan na povišenu temperaturu te se ne uništava pripremom ribe, tj. kuhanjem i pečenjem.

Simptomi koji se javljaju kod trovanja ovim toksinima dijele se na gastrointestinalne simptome, kao što su mučnina, povraćanje, proljev, itd., te neurološke, primjerice glavobolja, vrtoglavica, halucinacije i obamrlost. Trovanje ovim toksinima nije nimalo bezazleno, jer su u teškim oblicima trovanja zabilježeni i smrtni slučajevi. Nažalost, neurološki simptomi katkad mogu trajati poprilično dugo (od nekoliko tjedana do nekoliko godina), tako da su čak zabilježeni slučajevi pogrešne dijagnoze u kojima se za osobe otrovane ovim toksinima smatralo da su oboljele od multiple skleroze.

Nadalje, postoje i slučajevi zaraze prilikom spolnog odnosa s partnerom koji je obolio od ciguatere, što pokazuje da se toksin prenosi tijekom odnosa. Najveći je problem kod trovanja ciguaterom to što ne postoji pravi lijek koji se može koristiti za izbacivanje toksina iz tijela. Ipak, da se ne biste odmah prepali, moram naglasiti da je ova bolest vezana uz dinoflagelate koji žive u tropskim i sutropskim područjima, pa se bolest najčešće javlja u sjevernom dijelu Australije, odnosno u Tihom oceanu, Srednjoj Americi i na Karibima, te u Indijskom oceanu. Time bi kostorog ulovljen u našem Jadranu trebao biti jestiv, pa stoga kažimo i nešto o tome kako ga pripremati.

Gulaš s bananama

Odmah napominjem da nikad nisam kušao kostoroga iz Jadrana, ali imao sam ga priliku jesti dok sam boravio u Brazilu, gdje se kostorozi oguljene kože često mogu naći na tamošnjim ribarnicama. Ako se pitate zbog čega se prodaje oguljene kože, sljedeći put kad ga ulovite taknite mu kožu pa će vam biti jasno da je zbog tvrdoće ta koža puno bliža koži morskih pasa i raža nego koštunjavih riba. Što se tiče okusa, moram reći da me se uopće nije dojmio, ali dopuštam da je to bilo zbog brazilskih recepata, koji su umnogome drukčiji od naših. Naime, Brazilci u spremanju ribe upotrebljavaju dosta različitih začina, pa čak i voća, te sam znao jesti ribu na gulaš (nikako ne miješati s našim brudetom) s bananama. Najbolje jelo koje sam probao od kostoroga bili su komadi fileta pohani na maslacu. Kao takav je bio u redu i podsjećao me je na standardni fish and chips. Takvome mu je okus donekle slatkast, iako to možda ima veze s maslacem. Nažalost, nisam ga imao priliku probati na naš najuobičajeniji način, tj. na gradele, samo s maslinovim uljem i soli na kraju, ali eto, to mogu ostaviti našim čitateljima u zadatak da nam jave dojmove ako ga je itko na takav način probao.

Ulovio sam meni nepoznatu ribu koju ste mi na kraju identificirali kao kostoroga. Budući da ne znam dovoljno o toj ribi, poslije sam gledao po internetu i našao da je neki smatraju otrovnom, pa me zanima je li to istina. Također, ovaj je put nisam konzumirao, ali pitam za sljedeći put ako je ulovim – može li se jesti?

Kostorog sam po sebi nije otrovan, tj. niti ima otrov u svojim bodljama, kao škarpina, niti ga ima u svojim unutarnjim organima, kao neki tropski došljaci u Jadran na koje u posljednje vrijeme upozoravamo, primjerice napuhače. Ipak, neki kostorozi u pojedinim dijelovima godine mogu postati otrovni jer se hrane morskim životinjama koje u sebi sadrže neke toksine.

Naime, u moru postoji velika grupa fitoplanktonskih organizama koji se nazivaju dinoflagelatima, za koje neki pretpostavljaju da objašnjavaju evoluciju razvoja biljnih u životinjske organizme. Neki dinoflagelati u određenom razdoblju svoga života proizvode toksin. Kako dinoflagelati žive na koraljima, algama, morskoj travi i drugim morskim organizmima, ribe koje se hrane tim morskim organizmima uz osnovnu hranu jedu i njih, te se proizvedeni toksin akumulira u njihovim tijelima, a kasnije se hranidbenim lancem akumulira i u većim karnivornim ribama koje se hrane prethodnima.

Akumulirani toksin

U slučaju da ljudi jedu ribe u kojima je bio akumuliran toksin, može doći do bolesti trovanja koja se zove ciguatera. Toksini koji uzrokuju ciguateru su ciguatoksin, maitotoksin, skaritoksin i palitoksin. Problem ciguatoksina je u tome što je nema mirisa ni okusa, tako da je ribu u kojoj je akumuliran teško prepoznati, a dodatni je problem u tome što je otporan na povišenu temperaturu te se ne uništava pripremom ribe, tj. kuhanjem i pečenjem.

Simptomi koji se javljaju kod trovanja ovim toksinima dijele se na gastrointestinalne simptome, kao što su mučnina, povraćanje, proljev, itd., te neurološke, primjerice glavobolja, vrtoglavica, halucinacije i obamrlost. Trovanje ovim toksinima nije nimalo bezazleno, jer su u teškim oblicima trovanja zabilježeni i smrtni slučajevi. Nažalost, neurološki simptomi katkad mogu trajati poprilično dugo (od nekoliko tjedana do nekoliko godina), tako da su čak zabilježeni slučajevi pogrešne dijagnoze u kojima se za osobe otrovane ovim toksinima smatralo da su oboljele od multiple skleroze.

Nadalje, postoje i slučajevi zaraze prilikom spolnog odnosa s partnerom koji je obolio od ciguatere, što pokazuje da se toksin prenosi tijekom odnosa. Najveći je problem kod trovanja ciguaterom to što ne postoji pravi lijek koji se može koristiti za izbacivanje toksina iz tijela. Ipak, da se ne biste odmah prepali, moram naglasiti da je ova bolest vezana uz dinoflagelate koji žive u tropskim i sutropskim područjima, pa se bolest najčešće javlja u sjevernom dijelu Australije, odnosno u Tihom oceanu, Srednjoj Americi i na Karibima, te u Indijskom oceanu. Time bi kostorog ulovljen u našem Jadranu trebao biti jestiv, pa stoga kažimo i nešto o tome kako ga pripremati.

Gulaš s bananama

Odmah napominjem da nikad nisam kušao kostoroga iz Jadrana, ali imao sam ga priliku jesti dok sam boravio u Brazilu, gdje se kostorozi oguljene kože često mogu naći na tamošnjim ribarnicama. Ako se pitate zbog čega se prodaje oguljene kože, sljedeći put kad ga ulovite taknite mu kožu pa će vam biti jasno da je zbog tvrdoće ta koža puno bliža koži morskih pasa i raža nego koštunjavih riba. Što se tiče okusa, moram reći da me se uopće nije dojmio, ali dopuštam da je to bilo zbog brazilskih recepata, koji su umnogome drukčiji od naših. Naime, Brazilci u spremanju ribe upotrebljavaju dosta različitih začina, pa čak i voća, te sam znao jesti ribu na gulaš (nikako ne miješati s našim brudetom) s bananama. Najbolje jelo koje sam probao od kostoroga bili su komadi fileta pohani na maslacu. Kao takav je bio u redu i podsjećao me je na standardni fish and chips. Takvome mu je okus donekle slatkast, iako to možda ima veze s maslacem. Nažalost, nisam ga imao priliku probati na naš najuobičajeniji način, tj. na gradele, samo s maslinovim uljem i soli na kraju, ali eto, to mogu ostaviti našim čitateljima u zadatak da nam jave dojmove ako ga je itko na takav način probao.
