Čini se da je otrovnost, odnosno jestivost kostoroga, unatoč činjenici da je ta tema u medijima obrađivana više puta, jedna od onih vječnih tema. Naime, mnogi ribolovci pitaju o jestivosti ove vrste i opravdavaju svoju zbunjenost činjenicom da negdje u literaturi piše da je kostorog otrovan, a negdje da nije.

Kada se govori o otrovnosti nekog organizma, ponajprije je potrebno definirati na koji je način taj organizam otrovan. Ribe mogu zdravlje i život čovjeka ugroziti na više načina: otrovnim ugrizom, otrovnim ubodom, otrovnom krvlju ili otrovnim mesom, dok je u slučaju najnovijeg doseljenika, popularne fugu ribe, to moguće i samim dodirom.

Kostorog (Balistes capriscus, Gmelin, 1789.) je riba iz obitelji kostorožaca (Balistidae) i u našem je moru trenutno jedini predstavnik svoje obitelji.

Budući da nastanjuje more od pličina pa sve do 100 metara dubine, no ponajprije zbog posljedica globalnog zatopljenja, ulovi kostoroga su sve brojniji, tako da se sve više ribara susreće s ovom ribom.

Jadranski kostorog nije otrovna riba. Prva leđna peraja ima manju bodlju koja kao zaponac na mehanizmu za okidanje kod vatrenog oružja drži veliku prvu bodlju. U trenutku kada se riba nađe u opasnosti, ta se prva velika bodlja, kojoj kostorog i duguje ime, aktivira i postavlja u borbeni položaj, okomito na liniju leđa ribe. Budući da je ta bodlja izuzetno jaka i u odnosu na ostale poprilično debela, rana koju može uzrokovati njezin ubod nikad nije bezazlena.

Nadalje, budući da su mu omiljena hrana rakovi, ježevi i brojni drugi oklopljeni beskralježnjaci, kostorog je evolucijski razvio izuzetno snažan čeljusni aparat s prema naprijed isturenim zubima koji se u zagrizu slažu poput dobro usklađenih škara. Ugriz, čak i malog nedoraslog kostoroga bez problema može kirurški precizno odsjeći komad tkiva koji se nađe između vilica.

Nakon što riba ugine, bodlja još dugo vremena može ostati ukočena i aktivna, što je zapravo samo refleks. No taj isti refleks može aktivirati i opasne čeljusti. Stoga, tek nakon što se bodlja potpuno opusti i legne u svoj džep na leđima, može se smatrati da je riba potpuno uginula.

OPASNI SU TROPI

Iako jadranski kostorog nije otrovna riba, priča o otrovnosti ove vrste dolazi iz tropskih mora u kojima su, osim ove vrste, za zdravlje i život čovjeka opasne i brojne druge riblje vrste, pa čak i školjke i rakovi čije tkivo sadrži nervni riblji otrov ciguateru.

Ciguatera je otrov koji se taloži u tkivu riba koje se hrane dinoflagelatima vrste Gambierdicus toxicus (Adachi and Fukuyo, 1979.), a koji žive u tropskim i suptropskim morima.

Dakle, do zatrovanosti ciguaterom može doći isključivo ako se pojedu ribe koje su se hranile dinoflagelatima direktno ili indirektno, hranidbenim lancem.

No, budući da ne postoji niti jedan podatak koji bi potvrdio prisutnosti toksičnih dinoflagelata u našem moru, uz činjenicu da se kostorog hrani bentoskim beskralješnjacima, po toj ga osnovi možemo smatrati potpuno neotrovnom vrstom.

Čeljusni aparat je vrlo jak, naoružan oštrim zubima koji su aktivni i kada se čini da je riba uginula

No, da ne bi ostalo sve na teoretiziranju, odlučio sam pojesti kostoroga teškog oko 0,80 kg i na vlastitoj se koži uvjeriti u njegovu jestivost. Budući da je koža u kostoroga izuzetno tvrda i gusto pokrivena grubim plakoidnim ljuskama, trebalo ga je najprije oderati.

Najpraktičnije je bilo filetirati ga, odvajajući bokove od kičme, nakon čega se koža od repa prema glavi vrlo jednostavno odvaja. Dovoljno je nožem zaći između kože i mesnog dijela, te pridržavajući kožu, nožem za filetiranje u jednom potezu je skinuti. Naravno, u tom postupku koža mora biti dolje, na radnoj podlozi.

Tako filetirano meso pečeno je tek lagano posoljeno, bez ikakvih drugih začina, kako bi se mogao što bolje osjetiti njegov temeljni okus. I premda je bilo puno skepse među kolegama ribolovcima s kojima sam tu večer dijelio stol, jedan po jedan kušali su kostoroga, te se ugodno iznenadili.

Meso je tvrđe, konzistentno, ali vrlo ukusno i tečno tako da je kostorog sa stola nestao prije nego što je bilo tko stigao izvući aparat ili barem mobitel.

Nutricionisti su utvrdili da se prema sadržaju masnih kiselina u mesu ne razlikuje bitnije od mesa bakalara, s tim da ima visok udjel proteina, što zapravo znači da ga kao obrok nipošto ne treba preskakati, bilo svježeg, bilo dimljenog ili sušenog pa čak i soljenog, čega ću se ubuduće striktno držati.

Čini se da je otrovnost, odnosno jestivost kostoroga, unatoč činjenici da je ta tema u medijima obrađivana više puta, jedna od onih vječnih tema. Naime, mnogi ribolovci pitaju o jestivosti ove vrste i opravdavaju svoju zbunjenost činjenicom da negdje u literaturi piše da je kostorog otrovan, a negdje da nije.

Kada se govori o otrovnosti nekog organizma, ponajprije je potrebno definirati na koji je način taj organizam otrovan. Ribe mogu zdravlje i život čovjeka ugroziti na više načina: otrovnim ugrizom, otrovnim ubodom, otrovnom krvlju ili otrovnim mesom, dok je u slučaju najnovijeg doseljenika, popularne fugu ribe, to moguće i samim dodirom.

Kostorog (Balistes capriscus, Gmelin, 1789.) je riba iz obitelji kostorožaca (Balistidae) i u našem je moru trenutno jedini predstavnik svoje obitelji.

Budući da nastanjuje more od pličina pa sve do 100 metara dubine, no ponajprije zbog posljedica globalnog zatopljenja, ulovi kostoroga su sve brojniji, tako da se sve više ribara susreće s ovom ribom.

Jadranski kostorog nije otrovna riba. Prva leđna peraja ima manju bodlju koja kao zaponac na mehanizmu za okidanje kod vatrenog oružja drži veliku prvu bodlju. U trenutku kada se riba nađe u opasnosti, ta se prva velika bodlja, kojoj kostorog i duguje ime, aktivira i postavlja u borbeni položaj, okomito na liniju leđa ribe. Budući da je ta bodlja izuzetno jaka i u odnosu na ostale poprilično debela, rana koju može uzrokovati njezin ubod nikad nije bezazlena.

Nadalje, budući da su mu omiljena hrana rakovi, ježevi i brojni drugi oklopljeni beskralježnjaci, kostorog je evolucijski razvio izuzetno snažan čeljusni aparat s prema naprijed isturenim zubima koji se u zagrizu slažu poput dobro usklađenih škara. Ugriz, čak i malog nedoraslog kostoroga bez problema može kirurški precizno odsjeći komad tkiva koji se nađe između vilica.

Nakon što riba ugine, bodlja još dugo vremena može ostati ukočena i aktivna, što je zapravo samo refleks. No taj isti refleks može aktivirati i opasne čeljusti. Stoga, tek nakon što se bodlja potpuno opusti i legne u svoj džep na leđima, može se smatrati da je riba potpuno uginula.

OPASNI SU TROPI

Iako jadranski kostorog nije otrovna riba, priča o otrovnosti ove vrste dolazi iz tropskih mora u kojima su, osim ove vrste, za zdravlje i život čovjeka opasne i brojne druge riblje vrste, pa čak i školjke i rakovi čije tkivo sadrži nervni riblji otrov ciguateru.

Ciguatera je otrov koji se taloži u tkivu riba koje se hrane dinoflagelatima vrste Gambierdicus toxicus (Adachi and Fukuyo, 1979.), a koji žive u tropskim i suptropskim morima.

Dakle, do zatrovanosti ciguaterom može doći isključivo ako se pojedu ribe koje su se hranile dinoflagelatima direktno ili indirektno, hranidbenim lancem.

No, budući da ne postoji niti jedan podatak koji bi potvrdio prisutnosti toksičnih dinoflagelata u našem moru, uz činjenicu da se kostorog hrani bentoskim beskralješnjacima, po toj ga osnovi možemo smatrati potpuno neotrovnom vrstom.

No, da ne bi ostalo sve na teoretiziranju, odlučio sam pojesti kostoroga teškog oko 0,80 kg i na vlastitoj se koži uvjeriti u njegovu jestivost. Budući da je koža u kostoroga izuzetno tvrda i gusto pokrivena grubim plakoidnim ljuskama, trebalo ga je najprije oderati.

Najpraktičnije je bilo filetirati ga, odvajajući bokove od kičme, nakon čega se koža od repa prema glavi vrlo jednostavno odvaja. Dovoljno je nožem zaći između kože i mesnog dijela, te pridržavajući kožu, nožem za filetiranje u jednom potezu je skinuti. Naravno, u tom postupku koža mora biti dolje, na radnoj podlozi.

Tako filetirano meso pečeno je tek lagano posoljeno, bez ikakvih drugih začina, kako bi se mogao što bolje osjetiti njegov temeljni okus. I premda je bilo puno skepse među kolegama ribolovcima s kojima sam tu večer dijelio stol, jedan po jedan kušali su kostoroga, te se ugodno iznenadili.

Meso je tvrđe, konzistentno, ali vrlo ukusno i tečno tako da je kostorog sa stola nestao prije nego što je bilo tko stigao izvući aparat ili barem mobitel.

Nutricionisti su utvrdili da se prema sadržaju masnih kiselina u mesu ne razlikuje bitnije od mesa bakalara, s tim da ima visok udjel proteina, što zapravo znači da ga kao obrok nipošto ne treba preskakati, bilo svježeg, bilo dimljenog ili sušenog pa čak i soljenog, čega ću se ubuduće striktno držati.
