Bit će tome uskoro već 150 godina, kad je u travnju 1875. godine, Imotski posjetio car Franjo Josip. Na veličanstvenom dočeku koji su mu priredili Imoćani, cara je, bare, tako legenda glasi, osobito očarala torta koju su imotske domaćice poklonile austrijskom caru. Osmišljena specijalno za okrunjenu glavu, Imotska torta i sama je nosila svojevrsnu krunu, a oduševljeni Franjo Josip nazvao ju je "caricom među slasticama".

Imotska torta i danas se smatra posebnom delikatesom, bez nje su nezamislive najveće fešte u tom kraju, ali i drugdje, jer joj se slava nadaleko proširila. Svaka kuća u Imotskom ima svoj recept, što dodatno obogaćuje gastronomsku baštinu, a sladokuscima pruža izliku za ikušavanje. Mi vam predlažemo recept po kojem se oduvijek radila u obitelji Gjamonja i brojnim drugim imotskim obiteljima, a koji je našem Braci Ćosiću otkrila Maja Nikolić, autorica, uz pomoć kćerke Gabi i sina Haryja, kuharice "Imotski na pjatu", o čemu više možete pročitati ovdje.

Imotska torta

Sastojci za tijesto:

250 grama brašna
100 grama maslaca
2 žlice šećera
3 žumanjka
2 dl domaćeg prošeka, prašak za pecivo (na vrh noža), ribana kora od limuna, prstohvat soli.

Sastojci za nadjev:

7 jaja
500 grama šećera
500 grama bajama, ribana kora od limuna, ribana kora od naranče
2 vanilin šećera
2-3 žlice maraškina
1 žlica ruma
1/2 žličice cimeta
ribani oraščić, mljeveni klinčići, miris bajama gorkića (ekstrakt bittermandel)

Priprema:

Zamijesite mekano tijesto od svih sastojaka i pustite da malo odstoji.

Tridesetak bajama za ukrašavanje torte se špela, to jest dva minuta se potope u vrelu vodu i potom se s njih oguli kožica. Ostatak bajama se kratko poprži i samelje. Jaja i šećer se lagano miješaju kuhačom, pa im se dodaju mljeveni bajami i svi ostali sastojci.

Tijesto se podijeli na dva dijela. Jedan dio se razvalja na pola centimetra debljine. Njime se obloži maslacem namazan štanap (forma, kalup) za tortu, koji je plići od običnog i napuni se nadjevom.

Ostatak tijesta jednako se razvalja na istu debljinu i rodelom se izreže na trake široke 2 centimetra. Trake slažemo na nadjev razmaknute uzduž i poprijeko da se dobije gradelada, a nadjev između traka zadobije izgled rombova.

Odreže se preteklo tijesto s rubova štanpa, formiraju se roščići i postavi završna kružna traka tijesta po rubu torte.

Na križanjima traka škaricama se naprave rupice u koje se ubadaju špelani bajami. Torta se stavlja u zagrijanu pećnicu i peče 120 minuta na 120-150 stupnjeva. Ohlađena vadi se iz štanpa.

Vrlo bitno u cijeloj ovoj priči o Imotskoj carskoj torti jesu savjeti koje obvezno apostrofiraju najbolje imotske kuharice.

Prvo, tortu je najbolje napraviti u štanpu promjera 26 centimetara. Prošek kojim se zamiješa tijesto ne smije biti taman, jer će i torta biti tamne boje. Torta je ljepša što je svjetlija, a da bi to postigli ne smije se peći na jakoj vatri.

Mora također biti što ravnija, kako bi se istaknula ljepota gradelade. Da bi torta ostala ravna, nadjev se ne smije žbatiti ili još gore miksati, nego lagano miješati drvenom žlicom (kuhačom).

Bit će tome uskoro već 150 godina, kad je u travnju 1875. godine, Imotski posjetio car Franjo Josip. Na veličanstvenom dočeku koji su mu priredili Imoćani, cara je, bare, tako legenda glasi, osobito očarala torta koju su imotske domaćice poklonile austrijskom caru. Osmišljena specijalno za okrunjenu glavu, Imotska torta i sama je nosila svojevrsnu krunu, a oduševljeni Franjo Josip nazvao ju je "caricom među slasticama".

Imotska torta i danas se smatra posebnom delikatesom, bez nje su nezamislive najveće fešte u tom kraju, ali i drugdje, jer joj se slava nadaleko proširila. Svaka kuća u Imotskom ima svoj recept, što dodatno obogaćuje gastronomsku baštinu, a sladokuscima pruža izliku za ikušavanje. Mi vam predlažemo recept po kojem se oduvijek radila u obitelji Gjamonja i brojnim drugim imotskim obiteljima, a koji je našem Braci Ćosiću otkrila Maja Nikolić, autorica, uz pomoć kćerke Gabi i sina Haryja, kuharice "Imotski na pjatu", o čemu više možete pročitati ovdje.

Imotska torta

Sastojci za tijesto:

250 grama brašna
100 grama maslaca
2 žlice šećera
3 žumanjka
2 dl domaćeg prošeka, prašak za pecivo (na vrh noža), ribana kora od limuna, prstohvat soli.

Sastojci za nadjev:

7 jaja
500 grama šećera
500 grama bajama, ribana kora od limuna, ribana kora od naranče
2 vanilin šećera
2-3 žlice maraškina
1 žlica ruma
1/2 žličice cimeta
ribani oraščić, mljeveni klinčići, miris bajama gorkića (ekstrakt bittermandel)

Priprema:

Zamijesite mekano tijesto od svih sastojaka i pustite da malo odstoji.

Tridesetak bajama za ukrašavanje torte se špela, to jest dva minuta se potope u vrelu vodu i potom se s njih oguli kožica. Ostatak bajama se kratko poprži i samelje. Jaja i šećer se lagano miješaju kuhačom, pa im se dodaju mljeveni bajami i svi ostali sastojci.

Tijesto se podijeli na dva dijela. Jedan dio se razvalja na pola centimetra debljine. Njime se obloži maslacem namazan štanap (forma, kalup) za tortu, koji je plići od običnog i napuni se nadjevom.

Ostatak tijesta jednako se razvalja na istu debljinu i rodelom se izreže na trake široke 2 centimetra. Trake slažemo na nadjev razmaknute uzduž i poprijeko da se dobije gradelada, a nadjev između traka zadobije izgled rombova.

Odreže se preteklo tijesto s rubova štanpa, formiraju se roščići i postavi završna kružna traka tijesta po rubu torte.

Na križanjima traka škaricama se naprave rupice u koje se ubadaju špelani bajami. Torta se stavlja u zagrijanu pećnicu i peče 120 minuta na 120-150 stupnjeva. Ohlađena vadi se iz štanpa.

Vrlo bitno u cijeloj ovoj priči o Imotskoj carskoj torti jesu savjeti koje obvezno apostrofiraju najbolje imotske kuharice.

Prvo, tortu je najbolje napraviti u štanpu promjera 26 centimetara. Prošek kojim se zamiješa tijesto ne smije biti taman, jer će i torta biti tamne boje. Torta je ljepša što je svjetlija, a da bi to postigli ne smije se peći na jakoj vatri.

Mora također biti što ravnija, kako bi se istaknula ljepota gradelade. Da bi torta ostala ravna, nadjev se ne smije žbatiti ili još gore miksati, nego lagano miješati drvenom žlicom (kuhačom).

Bit će tome uskoro već 150 godina, kad je u travnju 1875. godine, Imotski posjetio car Franjo Josip. Na veličanstvenom dočeku koji su mu priredili Imoćani, cara je, bare, tako legenda glasi, osobito očarala torta koju su imotske domaćice poklonile austrijskom caru. Osmišljena specijalno za okrunjenu glavu, Imotska torta i sama je nosila svojevrsnu krunu, a oduševljeni Franjo Josip nazvao ju je "caricom među slasticama".

Imotska torta i danas se smatra posebnom delikatesom, bez nje su nezamislive najveće fešte u tom kraju, ali i drugdje, jer joj se slava nadaleko proširila. Svaka kuća u Imotskom ima svoj recept, što dodatno obogaćuje gastronomsku baštinu, a sladokuscima pruža izliku za ikušavanje.
