Bakini savjeti, požutjele kuharice i ženski žurnali nekoć su bili najkorišteniji izvori kulinarskih savjeta, a danas su tu ulogu preuzele društvene mreže. Mnogima je TikTok postao glavni izvor ideja za recepte, kuharske trikove i savjete za pripremu hrane, a kreatori sadržaja koji se svojim pratiteljima obraćaju putem te društvene platforme neumorno štancaju svoj materijal. I bude tu dobrih stvari. Ali također i nevjerojatno glupih ideja.
Jedna od onih koje su se pokazale problematičnima je ideja o dodavanja instant kvasca u pire krumpir. Taj bi postupak, u teoriji, trebao pire učiniti pahuljastima i dati mu bolji okus.

Kada se kvasac pomiješa s mlijekom i doda u pire krumpir, mjehurići ugljičnog dioksida koji se oslobađaju djelovanjem kvaščevih gljivica mijenjaju teksturu i okus pirea, pa pire, nakon što je tako začinjen odstajao 20-ak minuta, blago naraste, postane pomalo pikantan i bude rahliji.

Dodavanje kvasca u pire krumpir nije dobra ideja, jer pire nakon dodavanja kvasca ne ide u pećnicu, a nije dovoljno vruć da bi ubio aktivne kulture kvasca, kao što se to događa za vrijeme pečenja kruha i drugih tijesta s kvascem, a kad se aktivni kvasac nađe u probavnom sustavu, može uzrokovati gastrointestinalne probleme.

Sve što vam treba je kvalitetan, brašnast krumpir, po mogućnosti skuhan u kori, premda to nije neophodno, i dobit ćete teksturu o kakvoj sanjate. U potrazi za boljim okusom umjesto s kvascem puno je pametnije eksperimentirati s češnjakom. Možete ga prokuhati u otopljenom maslacu koji se potom koristi za pirpremu pirea (češnjak se može ispasirati ili se baca, ovisno o stupnju intenziteta okusa koji se želi postići), a možete ga dodati izravno u pire (u tom slučaju koristiti granulirani jer sirovi bi bio malo prežestok).
Ako vam okus češnjaka baš nije po guštu, dobra ideja je dodavanje malo muškatnog oraščića ili svježeg začinskog bilja. Imate još jednu zgodnu opciju, koja popravlja i okus i teksturu: zamijenite mlijeko slatkim vrhnjem ili krem sirom.

Bakini savjeti, požutjele kuharice i ženski žurnali nekoć su bili najkorišteniji izvori kulinarskih savjeta, a danas su tu ulogu preuzele društvene mreže. Mnogima je TikTok postao glavni izvor ideja za recepte, kuharske trikove i savjete za pripremu hrane, a kreatori sadržaja koji se svojim pratiteljima obraćaju putem te društvene platforme neumorno štancaju svoj materijal. I bude tu dobrih stvari. Ali također i nevjerojatno glupih ideja.
Jedna od onih koje su se pokazale problematičnima je ideja o dodavanja instant kvasca u pire krumpir. Taj bi postupak, u teoriji, trebao pire učiniti pahuljastima i dati mu bolji okus.

Kada se kvasac pomiješa s mlijekom i doda u pire krumpir, mjehurići ugljičnog dioksida koji se oslobađaju djelovanjem kvaščevih gljivica mijenjaju teksturu i okus pirea, pa pire, nakon što je tako začinjen odstajao 20-ak minuta, blago naraste, postane pomalo pikantan i bude rahliji.
Volite li kremasti pire s blagim okusom maslaca i mlijeka, ovo definitivno nije savjet koji biste trebali uvažiti, a nije ni ako ne uzimate svoje zdravlje zdravo za gotovo (malo se igramo riječima, ali upozorenje shvatite ozbiljno).

Dodavanje kvasca u pire krumpir nije dobra ideja, jer pire nakon dodavanja kvasca ne ide u pećnicu, a nije dovoljno vruć da bi ubio aktivne kulture kvasca, kao što se to događa za vrijeme pečenja kruha i drugih tijesta s kvascem, a kad se aktivni kvasac nađe u probavnom sustavu, može uzrokovati gastrointestinalne probleme.
Ovaj problematični savjet privukao je pažnju liječnika i nutricionista koji su se mahom izjasnili protiv njegove primjene. Većina njih pozorava kako konzumiranje sirovog (aktiviranog) kvasca može dovesti do nadutosti, grčeva, zatvora ili proljeva. Također, upozoravaju stručnjaci, može povećati rizik od gljivičnih infekcija, posebno kod ljudi koji su kritično bolesni ili imaju oslabljen imunološki sustav.

Osim toga, primjećuju, neki ljudi imaju alergiju ili intoleranciju na kvasac kojih nisu svjesni, kao što ima i onih koji su svojih intolerancija i alegrija svjesni, ali jednostavno ne očekuju kvasac u pire krumpiru pa ih ne spominju kad su njime ponuđeni.
Zaključak ove priče je jednostavan: želite li bolji pire, ne eksperimentirajte sa sumnjivim sastojcima. A i zašto biste, kad je to sasvim ako postići na puino prihvatljiviji način?
Sve što vam treba je kvalitetan, brašnast krumpir, po mogućnosti skuhan u kori, premda to nije neophodno, i dobit ćete teksturu o kakvoj sanjate. U potrazi za boljim okusom umjesto s kvascem puno je pametnije eksperimentirati s češnjakom. Možete ga prokuhati u otopljenom maslacu koji se potom koristi za pirpremu pirea (češnjak se može ispasirati ili se baca, ovisno o stupnju intenziteta okusa koji se želi postići), a možete ga dodati izravno u pire (u tom slučaju koristiti granulirani jer sirovi bi bio malo prežestok).
Ako vam okus češnjaka baš nije po guštu, dobra ideja je dodavanje malo muškatnog oraščića ili svježeg začinskog bilja. Imate još jednu zgodnu opciju, koja popravlja i okus i teksturu: zamijenite mlijeko slatkim vrhnjem ili krem sirom.
