Čičoka (Helianthus tuberosus L.), poznata i kao divlji krumpir, gomoljasti suncokret, jeruzalemska artičoka, morski krumpir i morska repa, visoko kotira na listi zdravih namirnica.

Prepoznatljiva je po svojim velikim žutim cvjetovima i visokoj stabljici, koja može narasti i do tri metra, piše živim.hr.

Sjajna za dijabetičare

Posebna je po tome što, za razliku od krumpira, ne sadrži škrob nego inulin, zbog čega se posebno preporučuje za prehranu dijabetičara. Inulin ima glikemijski indeks nula i probiotik je koji stimulira razvoj korisnih bakterija u crijevima.

No, čičoka nije dobra samo za dijabetičare, preporučuje se svima kojim imaju rizik od kardiovaskularnih bolesti. U neuglednom korijenu ove biljke krije se pravo bogatstvo.

Uz to što pomaže kod bolesti krvi i krvnih žila, alergija, artritisa, reumatskih bolesti..., ima i snažno antibakterijsko i antioksidativno djelovanje.

Potječe iz Sjeverne Amerike, a danas se uzgaja širom svijeta.

Prvotno se uzgajala kao vrtna biljka. Čičoka ima vrlo nisku kalorijsku vrijednost (79 kcal na 100 g), sadrži pretežno ugljikohidrate, nešto bjelančevina i zanemarivu količinu masnoća.

Ima gotovo sve vitamine B-skupine te nešto vitamina C. Sadrži i minerale kao što su željezo, kalij, kalcij, fosfor i magnezij te za organizam nužne esencijalne aminokiseline.

Može i sirova

Čičoka se obično sadi u rano proljeće, gomolji nalikuju đumbiru, boja varira od blijedo-smeđe, ružičaste pa do bijele.

Može se jest i sirova, a ako se termički obrađuje, može se pirjati, kuhati, peći ili pržiti. Kuhana, pečena ili pirjana, čičoka je zamjena za krumpir, ali se brže skuha i slađa je od krumpira.

Na stranici Krenizdravo nalazimo savjete da se čičoka pere blagim trljanjem, kao i da joj je i kora jestiva.

Odsječeni dijelovi čičoke potamne kad su izloženi zraku, kao i jabuke. Kako biste to spriječili, prilikom pripreme stavite čičoke u posudu s hladnom vodom u kojoj se nalazi sok od limuna.

Ako čičoku želite pripremiti kao ukusan prilog nekom jelu, narežite je na sitnije komadiće i popržite je 10 – 15 minuta uz dodatak začina koje volite.

A mi prenosimo jako zanimljiv recept, onaj za salatu od pečenih čičoka s lješnjacima i kozjim sirom.


Sastojci:


600 g čičoke (bez kore i isječene na kolutove)

75 g lješnjaka

2 grančice majčine dušice

1 lovorov list

4 žličice maslinovog ulja

sok od pola limuna, sok od pola naranče

zelena salata ili mladi špinat (količina po želji)

100g tvrdog kozjeg sira narezanog na kockice

sol i papar po ukusu


Priprema: 

Popržite lješnjake u tavi oko 5 minuta, potom ih pustite da se ohlade i zatim isjeckajte.

Oguljene i narezane čičoke stavite u lim za pečenje i dodajte 3 žličice maslinovog ulja, majčinu dušicu, lovor, posolite te pecite u zagrijanoj pećnici 30 min na 200°C.

Kad su čičoke pečene ostavimo ih na tanjur da se malo ohlade i potom stavimo u zdjelu s nasjeckanom salatom. Za to vrijeme napravimo preljev za salatu od 1 žličice maslinovog ulja, dodamo sok pola limuna i pola naranče.

Preljev prelijemo preko salate i čičoka, popaprimo, dodamo sjeckane lješnjake i komadiće kozjeg sira i odmah poslužimo.

Čičoka (Helianthus tuberosus L.), poznata i kao divlji krumpir, gomoljasti suncokret, jeruzalemska artičoka, morski krumpir i morska repa, visoko kotira na listi zdravih namirnica.

Prepoznatljiva je po svojim velikim žutim cvjetovima i visokoj stabljici, koja može narasti i do tri metra, piše živim.hr.

Sjajna za dijabetičare

Posebna je po tome što, za razliku od krumpira, ne sadrži škrob nego inulin, zbog čega se posebno preporučuje za prehranu dijabetičara. Inulin ima glikemijski indeks nula i probiotik je koji stimulira razvoj korisnih bakterija u crijevima.

No, čičoka nije dobra samo za dijabetičare, preporučuje se svima kojim imaju rizik od kardiovaskularnih bolesti. U neuglednom korijenu ove biljke krije se pravo bogatstvo.

Uz to što pomaže kod bolesti krvi i krvnih žila, alergija, artritisa, reumatskih bolesti..., ima i snažno antibakterijsko i antioksidativno djelovanje.

Potječe iz Sjeverne Amerike, a danas se uzgaja širom svijeta.

Prvotno se uzgajala kao vrtna biljka. Čičoka ima vrlo nisku kalorijsku vrijednost (79 kcal na 100 g), sadrži pretežno ugljikohidrate, nešto bjelančevina i zanemarivu količinu masnoća.

Ima gotovo sve vitamine B-skupine te nešto vitamina C. Sadrži i minerale kao što su željezo, kalij, kalcij, fosfor i magnezij te za organizam nužne esencijalne aminokiseline.

Može i sirova

Čičoka se obično sadi u rano proljeće, gomolji nalikuju đumbiru, boja varira od blijedo-smeđe, ružičaste pa do bijele.

Može se jest i sirova, a ako se termički obrađuje, može se pirjati, kuhati, peći ili pržiti. Kuhana, pečena ili pirjana, čičoka je zamjena za krumpir, ali se brže skuha i slađa je od krumpira.

Na stranici Krenizdravo nalazimo savjete da se čičoka pere blagim trljanjem, kao i da joj je i kora jestiva.

Odsječeni dijelovi čičoke potamne kad su izloženi zraku, kao i jabuke. Kako biste to spriječili, prilikom pripreme stavite čičoke u posudu s hladnom vodom u kojoj se nalazi sok od limuna.

Ako čičoku želite pripremiti kao ukusan prilog nekom jelu, narežite je na sitnije komadiće i popržite je 10 – 15 minuta uz dodatak začina koje volite.

A mi prenosimo jako zanimljiv recept, onaj za salatu od pečenih čičoka s lješnjacima i kozjim sirom.


Sastojci:


600 g čičoke (bez kore i isječene na kolutove)

75 g lješnjaka

2 grančice majčine dušice

1 lovorov list

4 žličice maslinovog ulja

sok od pola limuna, sok od pola naranče

zelena salata ili mladi špinat (količina po želji)

100g tvrdog kozjeg sira narezanog na kockice

sol i papar po ukusu


Priprema: 

Popržite lješnjake u tavi oko 5 minuta, potom ih pustite da se ohlade i zatim isjeckajte.

Oguljene i narezane čičoke stavite u lim za pečenje i dodajte 3 žličice maslinovog ulja, majčinu dušicu, lovor, posolite te pecite u zagrijanoj pećnici 30 min na 200°C.

Kad su čičoke pečene ostavimo ih na tanjur da se malo ohlade i potom stavimo u zdjelu s nasjeckanom salatom. Za to vrijeme napravimo preljev za salatu od 1 žličice maslinovog ulja, dodamo sok pola limuna i pola naranče.

Preljev prelijemo preko salate i čičoka, popaprimo, dodamo sjeckane lješnjake i komadiće kozjeg sira i odmah poslužimo.
