Zbog manjka zaposlenih trenutno nudimo smanjeni izbor hrane", piše na jelovniku jednog restorana u Meersburgu na Bodenskom jezeru. Na mnogim kafićima i restoranima vidljivo su istaknuti oglasi kojim se traže konobari ili kuhari.

Slično je širom Njemačke. Deny Scarlino, vlasnik jednog bara pored Stuttgarta, kaže da ga je tijekom pandemije napustilo šestoro zaposlenih. "Jedan je počeo voziti kamion, drugi su prešli u industriju, tamo imaju urednije radno vrijeme", priča on za Deutsche Welle.

Sudbina gastronomije je da se najviše radi kad većina građana uživa slobodno vrijeme i želi uživati: uvečer, vikendom, preko praznika. Scarlino kaže da su mnogi strahovali da će serija lockdowna biti neprestana i da kafići više nikad neće biti puni.

Maren Eli (33) radila je u vrhunskim restoranima, tamo je upoznala supruga koji je kuhar. Ona smatra da je pomoć države tijekom razdoblja prinudnih odmora bila nedovoljna.

Država je pokrivala 60 posto od neto zarade, a kod onih koji imaju djecu i 67 posto. Naravno, kad ste kod kuće, nema napojnice koja je obično dobra dodatna zarada za zaposlene u ugostiteljstvu.

"Mislila sam da neću moći bez gastronomije", kaže Eli. Ali onda se zaposlila u marketingu i oduševljena je. Redovno radno vrijeme, slobodni vikendi, vrijeme za obitelj. Sada si više ne može zamisliti ponovni rad u restoranu.

Nedavno su udruge gastronoma i hotelijera uputile dramatičan apel vlastima da olakšaju zapošljavanje radne snage iz inozemstva, prije svega iz balkanskih zemalja. Procjenjuje se da 60 posto ugostiteljskih objekata traži radnike.

Korona brža od tržišta rada

No Enzo Weber s Instituta za istraživanje tržišta rada kaže da tijekom pandemije nije bilo posebnog "vala" odlazaka iz gastronomije, naprotiv. Tijekom pandemije je, kaže, manje ljudi napustilo posao nego prije nje. Ali, problem je u tome što nisu zapošljavani novi.

"Druge branše su dobitnici, recimo supermarketi, dostava hrane, call centri ili branše poput javne uprave, vrtića i tuđe njege", priča Weber. "Tamo se preselilo zapošljavanje jer su oni više zapošljavali nego drugi."

Slični problemi zadesili su i zrakoplovnu branšu gdje dramatičan manjak osoblja na aerodromima izaziva kaos i tisuće otkazanih letova u Njemačkoj.

I gastronomiju i zračni promet prvo je zatekla pandemija, ali ih je onda zatekao i brzinski oporavak od pandemije. Ljudi bi sada opet htjeli trošiti novac u restoranima ili na putovanja čak i više nego prije pandemije.

"Sad svi istovremeno pokušavaju obnoviti posao. Ali, tržište rada naprosto nije tako brzo. Dakle, korona je prebrza za tržište rada", dodaje Weber. Prognozira da će trajati do iduće godine dok se stvari ne dovedu u ravnotežu.

Bivša radnica u ugostiteljstvu Maren Eli pak kaže da poslodavci u gastronomiji moraju privući radnike boljim uvjetima."To počinje od plaće. U nekim oglasima za posao čitam kako se kao prednost naglašava povezanost linijama gradskog prijevoza ili plaćanje po kolektivnom ugovoru. Zbog manjka zaposlenih trenutno nudimo smanjeni izbor hrane", piše na jelovniku jednog restorana u Meersburgu na Bodenskom jezeru. Na mnogim kafićima i restoranima vidljivo su istaknuti oglasi kojim se traže konobari ili kuhari.

Slično je širom Njemačke. Deny Scarlino, vlasnik jednog bara pored Stuttgarta, kaže da ga je tijekom pandemije napustilo šestoro zaposlenih. "Jedan je počeo voziti kamion, drugi su prešli u industriju, tamo imaju urednije radno vrijeme", priča on za Deutsche Welle.

Sudbina gastronomije je da se najviše radi kad većina građana uživa slobodno vrijeme i želi uživati: uvečer, vikendom, preko praznika. Scarlino kaže da su mnogi strahovali da će serija lockdowna biti neprestana i da kafići više nikad neće biti puni.

Maren Eli (33) radila je u vrhunskim restoranima, tamo je upoznala supruga koji je kuhar. Ona smatra da je pomoć države tijekom razdoblja prinudnih odmora bila nedovoljna.

Država je pokrivala 60 posto od neto zarade, a kod onih koji imaju djecu i 67 posto. Naravno, kad ste kod kuće, nema napojnice koja je obično dobra dodatna zarada za zaposlene u ugostiteljstvu.

"Mislila sam da neću moći bez gastronomije", kaže Eli. Ali onda se zaposlila u marketingu i oduševljena je. Redovno radno vrijeme, slobodni vikendi, vrijeme za obitelj. Sada si više ne može zamisliti ponovni rad u restoranu.

Nedavno su udruge gastronoma i hotelijera uputile dramatičan apel vlastima da olakšaju zapošljavanje radne snage iz inozemstva, prije svega iz balkanskih zemalja. Procjenjuje se da 60 posto ugostiteljskih objekata traži radnike.

Korona brža od tržišta rada

No Enzo Weber s Instituta za istraživanje tržišta rada kaže da tijekom pandemije nije bilo posebnog "vala" odlazaka iz gastronomije, naprotiv. Tijekom pandemije je, kaže, manje ljudi napustilo posao nego prije nje. Ali, problem je u tome što nisu zapošljavani novi.

"Druge branše su dobitnici, recimo supermarketi, dostava hrane, call centri ili branše poput javne uprave, vrtića i tuđe njege", priča Weber. "Tamo se preselilo zapošljavanje jer su oni više zapošljavali nego drugi."

Slični problemi zadesili su i zrakoplovnu branšu gdje dramatičan manjak osoblja na aerodromima izaziva kaos i tisuće otkazanih letova u Njemačkoj.

I gastronomiju i zračni promet prvo je zatekla pandemija, ali ih je onda zatekao i brzinski oporavak od pandemije. Ljudi bi sada opet htjeli trošiti novac u restoranima ili na putovanja čak i više nego prije pandemije.

"Sad svi istovremeno pokušavaju obnoviti posao. Ali, tržište rada naprosto nije tako brzo. Dakle, korona je prebrza za tržište rada", dodaje Weber. Prognozira da će trajati do iduće godine dok se stvari ne dovedu u ravnotežu.
