Svi volimo vjerovati da smo nenadmašni kad je riječ o gradelavanju, ali uvijek je dobro čuti još koji savjet sa strane. A mi smo ga dobili, vjerovali ili ne, na Braču, i to od majstora za leskovački roštilj Dragana Stojimenovića. Upoznali smo ga na kulinarskom natjecanju Biser mora, gdje je bio u ulozi člana žirija.
Nakon što je završio sa sudačkim dužnostima drugog dana natjecanja u organizaciji udruge Šefova kuhinja mediteranskih i europskih regija, meštar se prihvatio posla za roštiljem pa je uz asistenciju svojih pomoćnika ispekao impozantnu količinu piletine i, naravno, ćevapa, jer kako bi uopće bilo moguće da gastroperformans stručnjaka za leskovački roštilj prođe bez tog specijaliteta?

Stali smo u red i mašili se za par komada koje je Dragan upravo skinuo s gradela pa smo ga, oduševljeni sočnošću piletine i pikantnošću ćevapa, zamolili za nekoliko majstorskih savjeta. Malo se nećkao, ali uspjeli smo ga privoljeti, a razgovor smo započeli pitanjem koje, vjerujemo, ne muči samo nas nego i druge: koja je tajna savršeno pečene piletine s roštilja?
– Želite li sočnu, dobro pečenu piletinu s roštilja, ne smijete zaboraviti pac. To je tajna.
Mislite na pac na bazi ulja?
– Može pac s uljem, ali meso najprije treba posoliti, može se umjesto soli staviti malo Vegete. Dobro je dodati i malo suhe mljevene crvene paprike. Tako pripremljeno meso treba ostati u pacu barem pet – osam sati, a bolje bi bilo preko noći. Kad je riječ o piletini, uvijek je dobro da je se peče tek sutradan, nakon što je odstajala u pacu. Ne može se meso samo istranžirati pa odmah staviti peći, to nikako.

– Ovo vrijedi i za bijelo meso i za batke. Radite tako i uvijek će vam piletina biti lijepa i sočna.
Imate li nam još nešto za napomenuti u vezi s tim?
– Izvadite meso iz hladnjaka oko sat vremena prije pečenja i pazite kad pečete jer se piletina, nakon što je bila u pacu, uvijek brzo ispeče.

– Znate što je tajna? U ćevape ide meso druge i treće kategorije.

Ma dajte!
– Da. Najbolje od rebara. Omjer je 70 posto junetine, 20 posto svinjetine i 10 posto junećeg loja. To zadnje dodajemo zato što je junetina posna.
Što stavljate od začina?
– Ništa, samo vrlo sitno narezan luk i sol. Važno je da je lijepo posoljeno. Mjera je 0,2 posto soli.
Stavljate i vi malo sode bikarbone za mekšu teksturu?
– Nema potrebe.
A koliko ih ostavite da odstoje nakon što ih oblikujete?
– Ćevapi se odmah peku.

Je li istina da meso za ćevape, nakon što se smjesa zamiješa, treba ostaviti da odstoji preko noći kako bi se sastojci proželi?
– Istina je.
Imate li nam još nešto za savjetovati kad su pitanju ćevapi?
– Imam, nemojte ih nikad stavljati na prejaku vatru i stalno ih okrećite, to je jako važno.
A kako pečete pljeskavice i malo deblje komade mesa?
– Pljeskavice se peku nekih šest – osam minuta i kod njih je važno da su debele dva centimetra, to je optimalna debljina, a što se tiče debljih komada mesa, kao što je biftek, njega je bolje peći na tavi.
Stvarno? Ne na grilu?
– Ne, biftek ide na tavu. Na grilu može biti samo na trenutak, samo da ga roštilj takne, a onda ga treba dovršiti na tavi.
A što vi najviše volite s roštilja?
– Pljeskavice.

Svi volimo vjerovati da smo nenadmašni kad je riječ o gradelavanju, ali uvijek je dobro čuti još koji savjet sa strane. A mi smo ga dobili, vjerovali ili ne, na Braču, i to od majstora za leskovački roštilj Dragana Stojimenovića. Upoznali smo ga na kulinarskom natjecanju Biser mora, gdje je bio u ulozi člana žirija.
Nakon što je završio sa sudačkim dužnostima drugog dana natjecanja u organizaciji udruge Šefova kuhinja mediteranskih i europskih regija, meštar se prihvatio posla za roštiljem pa je uz asistenciju svojih pomoćnika ispekao impozantnu količinu piletine i, naravno, ćevapa, jer kako bi uopće bilo moguće da gastroperformans stručnjaka za leskovački roštilj prođe bez tog specijaliteta?

Stali smo u red i mašili se za par komada koje je Dragan upravo skinuo s gradela pa smo ga, oduševljeni sočnošću piletine i pikantnošću ćevapa, zamolili za nekoliko majstorskih savjeta. Malo se nećkao, ali uspjeli smo ga privoljeti, a razgovor smo započeli pitanjem koje, vjerujemo, ne muči samo nas nego i druge: koja je tajna savršeno pečene piletine s roštilja?
– Želite li sočnu, dobro pečenu piletinu s roštilja, ne smijete zaboraviti pac. To je tajna.
Mislite na pac na bazi ulja?
– Može pac s uljem, ali meso najprije treba posoliti, može se umjesto soli staviti malo Vegete. Dobro je dodati i malo suhe mljevene crvene paprike. Tako pripremljeno meso treba ostati u pacu barem pet – osam sati, a bolje bi bilo preko noći. Kad je riječ o piletini, uvijek je dobro da je se peče tek sutradan, nakon što je odstajala u pacu. Ne može se meso samo istranžirati pa odmah staviti peći, to nikako.

Vrijedi li ovo pravilo samo za bijelo meso ili i za druge pozicije kokoši?
– Ovo vrijedi i za bijelo meso i za batke. Radite tako i uvijek će vam piletina biti lijepa i sočna.
Imate li nam još nešto za napomenuti u vezi s tim?
– Izvadite meso iz hladnjaka oko sat vremena prije pečenja i pazite kad pečete jer se piletina, nakon što je bila u pacu, uvijek brzo ispeče.

– Znate što je tajna? U ćevape ide meso druge i treće kategorije.

– Da. Najbolje od rebara. Omjer je 70 posto junetine, 20 posto svinjetine i 10 posto junećeg loja. To zadnje dodajemo zato što je junetina posna.
Što stavljate od začina?
– Ništa, samo vrlo sitno narezan luk i sol. Važno je da je lijepo posoljeno. Mjera je 0,2 posto soli.
Stavljate i vi malo sode bikarbone za mekšu teksturu?
– Nema potrebe.
A koliko ih ostavite da odstoje nakon što ih oblikujete?
– Ćevapi se odmah peku.

Je li istina da meso za ćevape, nakon što se smjesa zamiješa, treba ostaviti da odstoji preko noći kako bi se sastojci proželi?
– Istina je.
Imate li nam još nešto za savjetovati kad su pitanju ćevapi?
– Imam, nemojte ih nikad stavljati na prejaku vatru i stalno ih okrećite, to je jako važno.
A kako pečete pljeskavice i malo deblje komade mesa?
– Pljeskavice se peku nekih šest – osam minuta i kod njih je važno da su debele dva centimetra, to je optimalna debljina, a što se tiče debljih komada mesa, kao što je biftek, njega je bolje peći na tavi.
Stvarno? Ne na grilu?
– Ne, biftek ide na tavu. Na grilu može biti samo na trenutak, samo da ga roštilj takne, a onda ga treba dovršiti na tavi.
